Sometimes it’s just nice to have a bowl of homemade muesli, it warms you up in winter and satisfies the urge to enjoy something that is grounding and warm. This is where Annie’s homemade muesli comes into its own.
Here’s what you will need.
- one large baking tray
- 500 gms organic rolled oats
- 250 gms sunflower seeds
- 250 gms pepita’s (pumpkin seeds)
- 100 gms shredded coconut
- 100 gms shaved coconut pieces
- 100 gms walnut pieces
- 1 tablespoon honey
- 1 drop of cinnamon bark essential oil (optional)
Optional extra ingredients –
- 100 gms sultanas
- 100 gms dried currants
- 100 gms dates
Putting it together –
Begin by spreading out the oats on your prepared baking tray. Follow on with the sunflower seeds, pumpkin seeds, coconut, and walnut pieces. Drizzle the honey over the top and gently stir in the more vulnerable ingredients like the coconut and walnuts.
Place in a hot oven and bake for 5 minutes, keep an eye on it, don’t walk away or get involved with another task, it’s very easy for this to burn. After 5 minutes, come back stir the unheated ingredients to allow for a more even toasting effect. Bake a further 5 minutes. Remove from the oven and allow to cool. Add one drop of cinnamon bark essential oil. Tossing the muesli through the essential oil adds a warming aroma.
If you desire more sweetened muesli add the sultanas, dried currants, and dates. If not you can leave out those ingredients.
Store in an airtight container either in the refrigerator or in the coolest part of your pantry. Store in a glass jar if possible.
Serve with fresh apple pieces and muesli mix soaked in hot water. Delicious.
